About two hours before smoking, remove the chicken from the fridge to allow the meat to thaw.
Peel the garlic from the husk. Cut the garlic cloves in half.Cut the chicken skin in several places and crush the garlic cloves.
Now prepare a smokehouse and make a fire under it. Remove the chicken foil. Spread the foil from under the chicken to the bottom of the smokehouse so that after smoking the chicken, the fat that is drained from the poultry can be easily removed. To give a special flavor, it is best to put on a foil sprigs of plums or apples. If you do not have such an opportunity, then fir branches may well come to replace them. Place the chicken on the grate that is inside the smokehouse. Chicken wings and legs should be adjacent to the body, and not stick in different directions. To prevent this from happening, just tie them with a string.
Close the lid tightly and place it over a low fire.
Smoking chicken does not take much time, it will be ready in literally one hour. Do not forget to check the chicken for readiness. To determine whether the chicken is ready or not, it is enough to open the smokehouse and make several deep cuts in the breast area. If you observe white meat and lack of blood in the bone area, then this means that your chicken is already approaching full readiness.
And now, when you see that smoke from apple or plum twigs began to come out of the smokehouse, the process is almost complete. Since the fire has weakened by this time, do not inflate it, but on the contrary, keep it in this state until the chicken is ready. Soon you will hear that the chicken "hissed", do not worry, it should be so. Give the bird a little more time and feel free to get it from the smokehouse.
